
Turkish cold salad, a healthy salad for the summer from Foodsavory.
Ingredients
Cucumber -1 (Large sized)
Tomatoes – 2 (Medium sized)
Green capsicum -1
Onion -1 (Medium sized)
Parsley leaves –1 cup (finely chopped)
Fresh mint leaves – ¼ cup (finely chopped)
Lemon juice – 2 tbsp
Extra virgin olive oil – 3 tsp
Salt – To taste
Method of preparation
Chop onions and add salt to it and let it rest for sometime.
Chop the tomatoes (after scooping out the inside content), cucumber and capsicum.
Transfer all the chopped vegetables into a salad bowl and add finely chopped mint leaves and parsley leaves.
Add lemon juice and salt to taste. Toss the salad well after adding olive oil. Refrigerate before serving!
Healthy Turkish cold salad is ready to be served!!
Note: In case you want to make the salad spicy, you can add crushed pepper or chopped jalapeno peppers.
