About Spicy Stewed Escarole with Pine Nuts, Raisins, and Black Olives

Sautéed Escarole Recipe

This recipe is a perfect blend of savory, sweet, and spicy flavors, making it a delightful addition to any menu. The star ingredient, escarole, is a type of endive with broad, slightly bitter leaves. When stewed, it transforms into a tender, flavorful base that absorbs the intricate flavors of the other ingredients. The pine nuts add a crunchy texture and a buttery flavor, while raisins impart a natural sweetness that balances the heat from the spices. The black olives, on the other hand, provide a briny depth that ties everything together.

Cooking Tips

  • Choosing Escarole: Look for escarole with firm, fresh-looking leaves. The outer leaves should be bright green, while the inner ones should be pale yellow.
  • Toasting Pine Nuts: Toast the pine nuts over medium heat, shaking the pan frequently to prevent them from burning. They’re ready when they’re golden brown and fragrant.
  • Balancing Flavors: If the stew is too spicy, add more raisins or a touch of honey to balance the heat. If it’s too sweet, add more olives or a splash of vinegar.
  • Don’t Rush: Allow the stew to simmer gently to let the flavors meld together.
  • Freshness Matters: Using fresh spices will significantly enhance the flavor of your stew.

  • Can I substitute escarole? Yes, you can substitute escarole with other leafy greens such as spinach or kale.
  • Can I make this vegan? Absolutely, simply omit the anchovies if included in your recipe.
  • Can I use green olives instead of black? Yes, but keep in mind that green olives are tangier and less ripe than black ones, which may alter the flavor.
