
Kothamalli Thogayal (Coriander chutney)
Kothamalli Thogayal is a typical Tamil Nadu style of preparation of Coriander Chutney. Apart from the aroma when used raw or dried in culinary, Coriander has many health benefits especially to control high cholesterol levels, blood sugar disorders etc. Foodsavory is pleased to present this traditional ‘Kothamalli Thogayal’ for its followers.
Ingredients:
A big bunch of coriander leaves – washed & finely chopped
Bedige Red Chillies Dry – 2
Urad Dhal – 2 tsp
Hing Powder (asafoetida powder)– 1 tsp
Tamarind – Tiny Marble size
Salt to taste
Cooking Oil – 2 Tbsp
Method of preparation:
Heat Oil. Fry the Urad dhal, Chillies, Tamarind and Hing (Asafoetida powder) till light golden in colour.
Let it cool and grind it with salt to a coarse paste in a mixer.
Now add the finely chopped coriander and blend to a smooth chutney.
Mix it well. Ensure that one does not grind for too long as bitterness may set in.
This is a perfect accompaniment for Rice, Idli, Dosa or even rotis.
