
Sambharam or spiced butter milk
Sambharam is a simple to make drink. It is the most sought after drink during the summer season in Kerala. It is the best thirst quencher I prefer during the summer season. It is spicy and the recipe that we are sharing would give you the wonderful flavor of curry leaves, lime leaves, etc. It is a great appetizer and is also served along with other Kerala dishes.
Ingredients
Curd/yoghurt – 1 cup
Green chillis – 2 numbers
Ginger – about 1 inch
Curry leaves – 5 to 8 leaves
Lime leaves – 2 leaves
Coriander leaves – to garnish
Water – 2 to 3 cups (dilute it as per need)
Salt to taste
Method of preparation
Use a blender to blend curd/yoghurt with water and salt. Chop ginger, green chillies, curry leaves and further crush it using motor and pestle. Add the crushed and pounded content into the diluted curd/yoghurt mix. Keep it in the refrigerator for chilling.
Serve the Sambharam/spiced butter milk chilled.
You can also garnish it with coriander leaves.
It is also seen as one of the main accompaniment in Onam Sadya.
Note: Adjust the spice and salt according to your taste.
One can add hing powder for additional taste.
Some green chillis are very spicy. So use it in moderation especially when serving to kids.
