
Ugadi is the festival which marks the beginning of a new year and is celebrated with festive fervor in the states of Karnataka and Andhra Pradesh. It welcomes the new beginning with nature is in full bloom, symbolizing regeneration and celebrating the season’s freshness.
Ugadi special menu includes Ugadi Pachadi, Mamidikaya Pulihora (Raw Mango Rice) , Mamidikaya Pappu (Mango Dal), Bottle gourd Kheer, Bobbatalu (obbattu) ,Obbattu saaru etc.
Raw Mango Rice (Mamidikaya Pulihora)
Ingredients
Cooked rice (cold) -2 cups
Grated raw mango -1 cup
Salt -To taste
For seasoning
Oil – 1 1/2 tbsp
Mustard seeds – 1 tsp
Chana dal – 1 tbsp
Urad dal – 1 tbsp
Dry red chillis – 3
Green chillis(slit) – 5
Grated ginger – 1 tsp
Asafoetida powder – 1/4 tsp
Turmeric powder – 1/4 tsp
Curry leaves – 5-10
Roasted peanuts and cashew nuts – A handful
Method of preparation:
Heat oil in a heavy bottomed pan.
When the oil becomes hot, add mustard seeds, channa dal and urad dal. Then add red chilies, green chilies, grated ginger, curry leaves, ginger and asafoetida powder. Add peanuts and cashew nuts and turmeric powder.
Add grated mango to the seasoning and stir fry for 3-4 minutes. Remove the pan and keep aside for a while.
Transfer this mixture to the vessel containing rice; add salt to taste and mix thoroughly.
Tangy mango rice is ready to be served !!!!!
