Gajar Halwa with a hint of Orange/GingerGajar Halwa with oranges

We all are familiar with the authentic gajar halwa but am a bit crazy about oranges so I have gone through a plethora of trials and errors which invariably have this ingredient. This is a small twist to the original version.

Ingredients:

Tender Dilli Gajar (Delhi Red Carrots) – 1 KG – Washed & Finely grated

Sugar – 1 1/2 cups

Milk – 1 ltr

Ghee – 6 tbsp

Orange large – 1 (else Orange Marmalade – 4 tbsp)

Cinnamon Powder – ¼ tsp

Slivered almonds, pistachio & Cashew – 1/4th cup

Method of Preparation:

Finely grate the rind of 1 orange (ensure you to do not touch the white skin just below the orange peel). Remove the orange pulp from inside and fine chop these (remove any seeds)

In a thick bottomed pan add 2 tbsp of ghee. Once heated add the grated carrots and mix well. To this add milk. This should cover the level of grated carrots in the pan. On low heat let it cook and keep stirring it often. In approximately 30 minutes you will find the carrots soft and all the milk absorbed. Now add the sugar, cinnamon powder, Orange rind & orange pulp (else marmalade). The color of the carrots would immediately change to a dark red, keep stirring till all the excess water from the melted sugar gets absorbed (approx. 30 mins more). In a separate pan heat the balance 4 tbsp of ghee, add the slivers of almonds, pistachio and cashew and immediately remove from heat. Pour this over the ready gajar halwa. Mix well.

Awesome ‘Gajar Halwa with Oranges’ is ready to be served!

Note: You can also serve the dish hot with vanilla ice cream too for a change. It really tastes yummy with it.
