Hummus is the arabic word to indicate chickpea cream with tahini sauce. It is a tasty recipe which can be combined with vegetables cruditè and arabic bread too.
Place the chickpeas in a mixer, add the tahini sauce, a pinch of salt, olive oil and lemon juice and mix it till it gets to a creamy, smooth and homogeneous sauce.
Serve it garnished with toasted sesame seeds, some poppy seeds, fresh mint and olive oil, accompanied by white pizza (with nothing on top, only pasta), arabic bread, Pita but also simply crackers.
If you want to make tahini sauce at home 100 gr of sesame seeds (better if already toasted) 30 gr of sesame oil
If you have not roasted sesame seeds, place them in a non-stick pan and let them toast, stirring constantly until they have reached a nice golden color. Let them cool. You can also toast the seeds in the oven at 180°C for 4 - 5 minutes.
Blend the sesame seeds until you get a fine powder, if you have a mortar use that. Add the sesame oil and blend or mix until you get a thick and creamy sauce.
