1. Bhindi – 250g

2. Grated Coconut – 2-3 tbsp

3. Dry roasted red chillies – 4-5

4. Tamarind – 1/2″ ball

5. Coriander Seeds – 2 tsp

6. Urad dal – 1 tsp

7. Mustard Seeds 1/2 tsp

8. Curry Leaves – 6-7

9. Coconut oil / cooking oil  – 1 tbsp

10. Salt to tasteMethod of Preparation:


Wash and dry the bhindi and cut them into 1″ pieces and keep aside. Dry roast the coriander seeds and urad dal till they turn fragrant and slightly change color. Keep it aside.

For the masala, grind together the coconut, chillies and tamarind with minimal water to form a dry coarse mixture. To this add the roasted coriander seeds and urad dal and grind for a few seconds.

Heat oil in a pan and add mustard seeds to it. When the mustard seeds pop, add the curry leaves and then add the ground masala and cut bhindi & mix well. Add salt & cover and cook on medium heat till the bhindi is well cooked.

Tastes best as a side dish with rice.
