Palada pradhaman is a delicious desert made with milk and rice ada. Rice ada is available in packets these days in all departmental stores.


Ada – (Ready made packed rice ada available in stores) – ½ cup

Milk – 2 litres

Water – 1 litre

Sugar – 1 cup

Condensed milk – 1 tin

Ghee / Butter – 4 tbsp

Method of Preparation

Heat butter/ ghee in a pan and fry ada till it becomes slightly pink in color.

Boil water in a kadai and add the fried ada and cook till done. Once the ada is cooked well drain the water completely and keep the ada aside.

Boil milk and water in a pan and add ada and cook by stirring continuously till the quantity of milk is reduced to 2/3rd. This might take around 1 hr roughly. The color would have turned to slight pink. Now add the condensed milk and sugar and cook for around 15 minutes in slow flame.

Delicious palada pradhaman is ready to be served. This can be served hot or cold. Adjust the sweetness to your taste by increasing/ reducing the quantity of sugar and condensed milk.

It is a very popular dish made during traditional Kerala feast.
