Mexican rice differs from the usual rice varieties in the sense that the ingredients are sautéed before cooking. Usually brown rice is used in making traditional Mexican rice but we can also make it with white rice.



Finely chopped onion -3/4 cup

Finely chopped green capsicum – ½ cup

Diced tomatoes -1 cup

Garlic -2 cloves (finely chopped)

Salt – To taste

Raw brown rice (Raw white rice)-11/2 cups

Water -31/2 cups


Dried oregano -1 tsp

Cumin (Jeera) powder -1 tsp

Olive oil -2 tbsp

Red chilly flakes – To taste depending on spice level required

Freshly ground pepper – To taste


Method of preparation


Heat 1 tbsp of olive oil in a pan.

Add the chopped onion and garlic and sauté it medium flame till the onion is translucent.

Add chopped capsicum, diced tomatoes and seasoning ingredients and sauté till the tomatoes are soft.

Remove from fire and keep aside.

Take a bigger pan and heat 1 tbsp of olive oil in it.

Add the rice and sauté for 5 minutes.

Add the sautéed vegetables to this and mix well.

Add water, stir well and cover tightly with a lid.

Cook with lid on in low flame till whole water is absorbed (for half an hr).

Take off the lid and see if the rice is cooked properly.

Mix well so that the vegetables are evenly spread in the rice.

Mexican vegetable rice is ready to be served. Serve hot.


Note: If the rice is not cooked with the measure of water mentioned above add another ½ cup of water after taking the lid off and cook again till the water is absorbed.
