Thoran is a dry dish made with a vegetable/ combination of one or more vegetables of choice. Almost all vegetables (except those with water content like cucumber, ashgourd etc) can be used for making thoran. Here the recipe for a common mixed vegetable thoran is given.


Cabbage (finely chopped) – 1 cup

Carrot grated – 1 cup

French beans (Finely chopped) – 1 cup

Fresh or frozen green peas -1/2 cup

Coconut (shredded) – 1 cup

Green chillies -2-3

Jeera (Cumin seeds) – 1 teaspoon

Turmeric powder -1/2 teaspoon

Salt to taste

 For tempering

 Coconut oil- 1 tablespoon

Mustard seeds – 1 tsp

Urad daal – 1 tsp

Curry leaves – a few

 Method of preparation

 Heat oil in a kadai. Splutter mustard seeds, urad daal and add curry leaves. Add cabbage, carrot, green peas and beans along with salt and turmeric powder .Mix well. Add little water and cover with a lid and allow the vegetables to cook.

Grind together coconut, jeera and green chillies to a coarse mixture.

Once the vegetables are fully cooked and there is no water content, make a well with the vegetables and add the ground coconut mixture in the middle and cover with vegetables. Cook in simmer for 2-3 minutes. Mix well and transfer the contents to a serving bowl.

Colorful and yummy thoran is ready to be served as a side dish along with steaming hot rice and Sambar. Thoran is one of the important side dish in any Onam Sadya/feast.
