
Pineapple chicken Recipe
One of my personal favorites and a show stealer in many a parties.
Sweet n’ sour chicken dish with distinct flavor which is a great accompaniment with white rice. Ready to steal a million hearts!!
Ingredients
Boneless chicken -1 kg (cut into small pieces)
Ginger paste -1/2 tsp
Garlic paste -1/2 tsp
Vinegar -1 tbsp
Mustard paste-1tbsp
Diced Onion – 1 cup
Soya sauce -1 tbsp
Crushed black pepper-1 tsp
Salt –To taste
Oil – 4 tbsp
For Pineapple sauce
Butter -2 tbsp
Pineapple juice – ½ cup
Pineapple cubes – 1 cup
Red chilly powder – 1tbsp
Diced Capsicum -1/2 cup
Diced tomatoes (After scooping out the inner portion) -1/2 cup
Method of preparation
To make the pineapple sauc
Heat butter in a pan.
Add the pineapple juice, red chilly powder, diced tomatoes, diced capsicum and pineapple pieces.
Cover with a lid and cook till the sauce thickens and the texture is smooth.
Heat oil in the pan.
Add the diced onions and sauté in medium flame for 2 minutes. Then add ginger paste, garlic paste, crushed pepper, mustard paste, chicken pieces, salt, soya sauce and vinegar. Mix well. Cover it with a lid and cook till the chicken is cooked tender.
Pour the pineapple sauce over the cooked chicken.
Cook for 2 minutes till the chicken absorbs the flavor from the pineapple sauce.
Your mouthwatering sweet n’ sour pineapple chicken is ready to be served. This can be a great accompaniment with white rice or even rotis.
Note : Instead of raw pineapple pieces, you can use smoked pineapple pieces for making the pineapple sauce. It gives a different taste and flavor to the dish.
