How to make Kalan (Moru Kootan) Recipe
Kalan is a loose gravy with curd as the base ingredient. Kalan is also called as pulissery or morukootan in some parts of kerala. The vegetables used in making kalan vary. Some of the usual vegetables used are cucumber, ashgourd, yam , raw plantain , ripe mango ,ripe kerala banana, pineapple etc. You can make kalan with just one vegetable or a mix of them.
The recipe mentioned here uses yam and raw plantain (kerala plantain or nenthrakkaya).
Ingredients
Raw plantain (cut into small square pieces) -1/2 cup
Yam (cut into small square pieces)- ½ cup
Sour curd – 2 cups
Coconut (shredded)-2 cups
Green chillies -3-4
Red chilly powder -1tsp
Turmeric powder -1tsp
Jaggery – 1 tsp
For seasoning
Oil- 1 tbsp
Mustard seeds – 1 tsp
Fenugreek seeds -1/2 tsp
Red chillies – 1-2
Curry leaves – a few
Method of preparation
Cook yam and plantain along with turmeric powder, red chilli powder and salt. Churn the curd well. Make a fine paste of coconut and green chillies and add to the cooked vegetables and bring to boil. Once it is boiled add the churned curd, jaggery, mix well and keep in low flame. Don’t let the mixture boil. Switch off when it froths.
Season using the ingredients mentioned and add to the kalan.
Sour, spicy and tasty kalan is ready to be served along with hot rice. Enjoy with olan. Kalan (moru Kootan) recipe is a must do accompaniment for Onam Sadya / feast.
Note : The method of preparation remains the same while using other vegetables too.
