Jamaican Curry Chicken

 

How to make awesome Jamaican curry chicken.

Jamaican curry chicken is a carrebian dish and one of my favorites. It is simple to cook recipe.

Ingredients

chicken breasts – cut into bite size pieces.
1 onion
spring onion (scallions) – 2 (2 scallions chopped)
Fresh thyme – about 3 to 4 stems chopped
3 cloves garlic – nicely chopped
1 tsp – black pepper
1 tsp chicken seasoning
3-4 tsp curry powder
potatoes – 1 or 2 (skin peeled and cut into cubes)
1 lemon
2 tsp vegetable oil
2 tsp butter
1 scotch bonnet pepper
salt to taste

Method of preparation

Wash chicken breasts with lemon and cut into bite size pieces. Season the chicken with curry powder, chicken seasoning, black pepper and salt (to taste). Then add diced green onion (spring onion or scallions), chopped garlic, onion, thyme and scotch bonnet pepper.

In a cooking pan, add vegetable oil and allow it to get hot. Add some chopped onion and garlic and saute it till it turns brown. Now add the seasoned chicken to the pan and allow it to cook. Add enough water if required for cooking.

As the chicken is simmering, add the cut potatoes and butter to the pan and allow it to cook. Cook until potatoes are tender.

Serve this awesome Jamaican chicken Curry along with hot rice.
