Irish soda bread is very simple and easy to make bread. The basic Irish soda bread is made with flour, baking soda, salt and butter milk. You can add raisins and dry fruits as a variation. I always have preferred the sweeter version of the bread, so you would find white sugar as an additional ingredient in my recipe.
Ingredients used
All-purpose flour – 5 cups
Baking powder-1 tablespoon
Salt – 1 ½ tablespoon.
Baking powder – 1 tablespoon
Sugar – 1 cup
Baking soda – 1 tablespoon
Unsalted butter – ½ cup (@ room temperature)
Raisins – about 2 cups
Buttermilk – 2 ½ cups
Egg – 1
Method of preparation
Keep oven for preheating at 350°F.
Apply butter to the cake pan. Ensure that the entire area coming in contact with the bread is well greased.
Whisk the all-purpose flour, sugar, baking powder, salt, and baking soda in a bowl to blend. Add remaining butter to it and rub the mixture well with your hand till coarse crumbs are formed. Now add raisins to it. Mix it well with your hand itself.
In another bowl, whisk egg and butter milk to blend. Add the entire content to the first bowl containing the mixture and stir it slowly using a spoon until it gets a dough consistency.
Now transfer the entire dough to the cake pan. Smoothen the dough and place the dough in a way that it mounds slightly in the center. Now with a knife dipped in flour, cut 1 inch ‘Cross’ (X) on the top portion of the dough.
Put the cake pan, containing the dough, in the oven and bake it till it is cooked. Generally it would take about 40 to 45 minutes for the bread to be ready. To check if the bread is properly cooked or not, insert toothpick to it and if it comes out clean then your bread is ready. Cool the bread for about 10 minutes.
