
It is festive season and India is celebrating HOLI,the festival of colours, today. There are some delicacies which are unavoidable and thus must haves on the auspicious day of HOLI. These include Mathris, Sweet Gujiyas, Bhaang, Thandai etc. These are North Indian delicacies and well relished by people all across India.
Foodsavory has great pleasure in introducing ‘Mathris’ to its followers.
Spicy Mathri
Ingredients:
Maida (Refined flour) – 2 cups
Sooji/ Rava (Semolina) – 1/4 cup
Salt to taste
Black Peppercorns – 1/2 teaspoon (crushed or coarsely ground)
Baking Powder – 1 pinch
curd – 2 table spoons
warm water – enough to knead
Ghee/ oil – 4 – 5 table spoons
Ghee/ Oil – for deep frying
Method of Preparation:
Make a firm dough by mixing Maida, Ghee/ Oil, salt,pepper,curd and water, – along with a pinch of baking powder.
Cover with a moist cloth and allow the dough to rest for 1/2 an hour.
Make lemon sized balls and roll them into circles. Pierce with a fork as we do not want mathris to puff up.
Heat Ghee/ Oil in a pan for frying the mathris.
Slowly put the rolled mathris into the oil and fry them till it is light golden in color.
Drain excess oil by placing them on tissue paper or kitchen napkins.
