Cherupayar Payasam

Ingredients Used:
Split and husked Cheruparippu / Moong Dal) – 1 cup
Thick coconut milk – 1 to 1/½ cup (optional if using milk and fresh cream)
1 glass milk
1 cup
Jaggery – 1 cup(grated)
Ghee – 3 to 4 teaspoons
Cardamom – crushed
Water – 1 to 1 1/2 cup
Cashew nuts – 10 to 15
Method of preparation
Add cleaned moong dal in a hot pan and dry roast it till slightly golden brown Add water to cook dal in a pressure cooker and cook till 1 whistle and allow it to settle.
Make jaggery syrup by adding 1 glass of water to hot pan and once the water boils add the jaggery and bring it to a boil.
Add 1 glass of milk to the jaggery syrup containing the dal and bring it to a boil.
Add 1 cup of fresh cream to the pan (containing all the above ingredients) and bring it to a boil. Allow it to boil for some more time in a simmer.
Add the cashew nuts roasted in ghee to the payasam and allow it to boil in simmer.
Add the crushed cardamom and allow it the cardamom flavor to get infused in the payasam by allowing it to boil for some more time in simmer.
