
Authentic Chicken Chettinad, also known as spicy pepper chicken, is a recipe from Chettinad. Chettinad is a place in Southern Tamil Nadu State, India. This place is well known for its Chettinad cuisines.
Ingredients required:
Chicken – Cut into medium pieces (200 grams)
Garam masala mix which includes – Cardamon (3 numbers), Cloves (2 numbers), Cinnamon (1 inch length), Bayleaves (2 dry leaves)
Mustard seeds – 1/2 tablespoon
Cumin Powder – 1 tablespoon
Turmeric Powder – 1 tablespoon
Red Chili Powder – 2 tablespoon
Coriander powder – 2 tablespoon
Ginger Garlic Paste – 1 tablespoon
Onions – 3 (medium sized ones)
Tomatoes – 2 big ones
Coriander Leaves
Curry leaves
Green Chili – 2 cut chilis
Salt to taste
Black Pepper – Full (Coarsely grind it) – 2 spoons of full black pepper to be coarsely ground
Refined Oil – 6 table spoons
Method of Preparation
Heat oil in a thick pan.
Add mustard seeds and let it crackle.
Add cumin seeds
Add Garam Masala mix which includes cardamom, cloves, cinnamon and bay leaves.
Add finely chopped onions and let it cook till brown. Now add salt to it. Cook onion till it is golden brown.
Add turmeric powder to taste.
Add ginger garlic paste & green chilies.
Add curry leaves now.
Add finally chopped tomatoes.
Add red chili powder, coriander powder and cumin powder.
Cook till all the moisture from the mixture is evaporated and cook till you get paste consistency. When the oil oozes out of this curry paste, add cut chicken into the pan having the paste that we have just readied.
Now cover the pan with a lid and cook it for five to seven minutes till the chicken oozes out the fat and water. Simmer it and let your chicken cook.
Now coarsely crush the black pepper and add it to the cooked chicken and thick sauce/paste. This would bring out the best flavor in the cooked Chicken and thus adds to the authenticity of your dish. Finally add freshly chopped Coriander leaves.
Now you have the awesome ‘Authentic Chicken Chettinad’ ready!
Chicken Chettinad goes well with rice, dosa, appam, & Chapattis.
